With summer just around the corner, we're excited to have our new Summer menu launched as we get everything ready to ensure we can offer the same warmth and attention to every guest who walks through our doors! And let's be honest—where would we be without our trusty to-do lists? There's nothing quite like the little dopamine hit you get when you cross something off. In fact, if I happen to do something that wasn’t on the list, you better believe I’ll write it down just so I can cross it off!

 

You'll start to see a few new faces at Brewed as our team grows for the Summer season, we're really proud and excited with our team this year, be sure to introduce yourselves and make them feel welcome.

We are still on the hunt for a skilled Sous-Chef to support our Head Chef Lou, details at the bottom of this email, if you know anyone who would be interested, send them our way!

Think Wellington on a Plate, but for Northland, we have an exceptional talent of wine makers, produce growers and artisans right here in Northland, so its time to celebrate and tell the world!

Locally inspired dishes, special one-off events, culinary collaborations, and immersive workshops, all served up with our warm Northland manaakitanga (hospitality) and some of the best views in the world! It’s time to taste the treasures of Tai Tokerau. Join us for an unforgettable month of culinary goodness.

 

Northland is home to delicious, fresh produce, amazing seafood, globally recognised wines, and award-winning restaurants, cafes and markets. Our sub-tropical paradise stretches from Mangawhai to Cape Reinga, the Tasman Sea to the Pacific Ocean! From hearty kai to unique dining experiences, get ready to Savour Northland with a huge range of foodie events this October!

At Brewed we worked with our chef and local wine makers to pair a couple of plates with wine and a cocktail to showcase the local ingredients available to us.

Savour Northland Challenge Highlights at Brewed As

This October, we had the privilege of participating in the Savour Northland Challenge, a celebration of Northland’s outstanding local produce and creative culinary talent. Competing alongside some of the region’s best, we’re thrilled to share the exciting results!

Perfect Pairings Success
We were honoured to receive Highly Commended for our Crispy Oras Oyster Mushroom dish paired with the refreshing East Meets North cocktail. Even more exciting, we took out the Perfect Pairings category with our Ruakaka Farmed Kingfish Penang Curry paired beautifully with Dancing Petrels (Oaked) Reserve Viognier. This award means so much, as it highlights our commitment to showcasing the best of Northland in every bite and sip.

Runners-Up for the Entire Event
While Terra claimed the top spot, we were incredibly proud to finish as Runners-Up for the entire competition, a testament to the hard work, passion, and creativity of our team.

A massive thank you to everyone who supported us and to the talented local producers who make events like this possible. We loved creating these dishes and can’t wait to see what’s next for Northland’s food scene!

Here is some of what the judges had to say:

"It truly was a gastronomic experience and exceptional customer

service was delivered with that extra ‘wow’ factor from booking and

arrival, through to the detailed explanation of the dish and the

matching wine. The team at Brewed As really excel at Manaaki–they

are passionate food ambassadors and exceptional hosts which

made you feel so welcome, at ease and inspired as well. The kingfish

penang curry was exceptional with all the added surprises like the

lychees, charred onion and crispy quinoa. To maintain the delicate

flavours of the sustainably farmed kingfish with the rich flavour of a

curry was outstanding. I was left wanting to lick the plate clean! The

oaked viognier from Dancing Petrel was a perfect pairing–a bit of

creamy sweet with the savoury dish flavours. It left such a lovely

finish on the palate and the owners were excited to tell the story of

the source vineyard and winemaker as well. Nothing was too much

of a problem and we were made to feel like VIPs each time we

visited. It is the people that made this experience so memorable and

welcoming."

really shone through. You couldn’t help but get excited with your

infectious enthusiasm. You expressed true hospitality and Manaaki

to everyone who walked through the door. Thank you for bringing

responsive customer service and recommendations for food +

Crispy Oyster Mushrooms⁠

from Ora’s Mushroom’s in Te Arai. Crisp and golden, these deep-fried delights are seasoned with aromatic Szechuan peppercorns, creating a bold and zesty flavour. They are served with a rich black vinegar and sweet chilli dipping sauce, adding a perfect balance of tangy, spicy, and sweet notes for an irresistible taste experience.⁠
North meets East cocktail⁠

Brooklane Winery TuiTui London Dry Gin with a refreshing balanced mix of Te Arai strawberries, basil and lime with a Mangawhai Honey & Szechuan syrup, creating a zesty, vibrant cocktail with a subtle tingling spice.

 

 

Northland farmed Yellowtail Kingfish (Haku). Sustainably raised in state-of-the-art recirculating aquaculture systems, offering a delicate yet rich taste that celebrates both tradition and innovation. Served with a fragrant coconut Penang curry with burst of lychees, charred onions, crispy organic quinoa and locally foraged kaffir lime leaves.⁠
Paired with Northlands Dancing Petrel’s Barrique Reserve Viognier. Aromatic – Hand harvested – Barrique fermented. Seductive – Smooth – Silky. The flavours will dance across your palate with spirit, freshness and a warmth born from the Far North. Light lemon/green with a fragrant bouquet of pears, lychee and cinnamon spice. Handpicked and seasoned in French oak barriques. Mouth-filling with a harmonious finish.

Why'd we choose Dumplings & Dub? Alliteration of course! but also, we love music, and want to create a simple vibe where friends can hang out and enjoy some tasty dumplings and feel some music.

What is Dub Music?

Looking for a Sous Chef

Location: East Coast Beach Town, Mangawhai Heads, 1.5 hours north of Auckland.

About Us:
Brewed As is a vibrant and friendly café and restaurant situated in the heart of Mangawhai. We are known for our unique approach to food, combining Asian fusion flavours with a modern flair. Our menu emphasizes fresh, locally sourced ingredients, reflecting our strong collaboration with Northland suppliers. Recently, we were proud to be named runner-up in the Savour Northland Awards, as well as winning the category for Perfect Pairing, recognizing our dish and wine pairing. Key Responsibilities:

  • Support the Head Chef in leading the kitchen team, ensuring smooth daily operations and maintaining exceptional food quality.

  • Mentor and train staff in portion control, presentation, and adherence to Brewed As standards.

  • Foster a positive kitchen culture to create a harmonious and enjoyable working environment.

  • Monitor food preparation, storage, and sanitation to meet health and safety standards.

  • Manage stock ordering, inventory checks, and ensure proper storage and labelling of all ingredients.

  • Conduct regular maintenance checks on kitchen equipment to minimize downtime.

  • Oversee cleanliness, hygiene, and organization within the kitchen, implementing cleaning schedules.

  • Contribute to menu creation and updates, balancing creativity with cost-effectiveness.

  • Ensure effective communication with the Head Chef, owners, and suppliers to support business operations.
